INGREDIENTS:

  • 1 cup of unsweetened almond milk
  • 1 tablespoon apple cider vinegar
  • 2 cups of universal flour
  • 1 3/4 cup of sugar
  • 3/4 cup cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup of rapeseed oil or melted coconut oil
  • 2/3 cup unsweetened applesauce
  • 1 tablespoon pure vanilla extract
  • 1 cup of boiling water

PREPARATION:

  1. Preheat the oven to 300 F / 160 C. (If you use a dark or non-stick pan, reduce the heat by 30 F).
    Gently apply grease to the Bundt pot to ensure removal of excess flour. Alternatively, apply grease to three 8-inch (25 cm) cake pans and line up on a parchment loop at the bottom of each cake pan.
  2. Lubricate the parchment loop.
  3. Melt chocolate in a double pan or microwave oven. Or, put the chocolate in a heat-resistant bowl, then put it in a small pot, then slowly pour the water into the small pot (the bottom of the bowl should be placed in the pot, but not in contact with water).
  4. Stir constantly until the chocolate melts, then remove the bowl from the pan and set aside.
    In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, instant coffee and salt.
  5. In another bowl, mix oil, orange juice, water, eggs and herbs.
  6. The wet ingredients are added to the dry mixture and mixed until mixed.
  7. Add the melted chocolate, stir until completely melted, and the batter becomes smooth.
  8. Pour the batter into the prepared pot.
  9. Bake in a preheated oven until the tester in the center of the cake is clean – if you use a Bonte pot, it takes about 50 to 60 minutes; 30 to 40 minutes (if you use a pot with a sandwich cake).
  10. Completely cooled on the wire rack.
  11. Glaze or frost as needed.

NOTES:

  1. For cupcakes, fill the liner half full and bake for 20-25 minutes. The entire recipe will produce approximately 24 cupcakes.
  2. Double the recipe to make a 4-layer cake, or cut in half to make a 1-layer round cake.
