  • 6 tablespoons olive oil
  • 2 lemons, 1 slice, 1 juice
  • 4 cloves of garlic, chopped
  • 1 teaspoon of coarse salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 pound trimmed green beans
  • 8 small red potatoes, sliced
  • 4 chicken breasts (the bones are kept with skin, about 3 1/4 lbs)


  1. Preheat the oven to 450 °F. Apply 1 tablespoon of olive oil to a large baking pan or cast iron skillet. Place the lemon slices in a single layer on the bottom of the plate or frying pan.
  2. In a large bowl, mix the remaining oil, lemon juice, garlic, salt and pepper; add the green beans and mix well. Use a slotted spoon or pliers to remove the mung beans and place them on the lemon slices. Add the potatoes to the same olive oil mixture and mix well. Use a slotted spoon or pliers to place the potatoes on the green beans along the inner edge of the dish or frying pan. Place the mixture of chicken and olive oil in the same bowl and apply a thorough coating. Place the chicken skin up on a plate or frying pan. Pour any remaining olive oil mixture onto the chicken.
  3. Bake for 50 minutes. Remove the chicken from the plate or frying pan. Return the beans and potatoes to the oven for more than 10 minutes until the potatoes are soft. Place the chicken breasts in 4 dishes; divide the green beans and potatoes equally. The service is warm.
