NO BAKE-ENERGY BITES

Ingredients

  • 1 cup (dry) oatmeal (I use old-fashioned oats)
  • 2/3 cup roasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup of flaxseed or wheat germ
  • 1/2 cup chocolate chip (optional)
  • 1/3 cup honey
  • 1 teaspoon vanilla

Instructions

  1. Put all ingredients together in a medium bowl and stir until thoroughly mixed. Refrigerate in the refrigerator for half an hour. After cooling, roll into a ball of any size. (About 1 mm in diameter.) Store in a sealed container and refrigerate for at least 1 week.
  2. Almost all of these ingredients can use alternative ideas! Feel free to use your favorite nut butter (almond butter, sunflower butter, etc.) instead of peanut butter. You can also add some wheat germ to replace some or all of the flaxseed. However, I would like to remind you not to use agave nectar instead of honey, as the thickness of the honey helps to bind the food together. Some other interesting alternatives to chocolate chips (or one of them) may include: Chopped dried fruit (apricot, jujube, raisins, etc.) Dried berries (cranberry, cherry, etc.) Chopped almonds, pecans, walnuts or sunflower seeds Other French fries (cream hard candy, dark chocolate, milk chocolate, white chocolate, M&M, etc.) Other cereals (different types of oatmeal, rice grains, etc.)
